Abstract: PURPOSE: A producing method of functional bean curd using colored sweet potato is provided to enable users to intake beta-carotene of orange sweet potato, antocyanine of purple sweet potato, and other active components. CONSTITUTION: A producing method of functional bean curd using colored sweet potato comprises the following steps: soaking 100 parts of soybean by weight and 50-100 parts of colored sweet potato by weight in water for 6-24 hours; crushing the water soaked mixture, and separating soy milk and bean curd dregs; heating the soy milk at 70-110 deg C, and adding a coagulating agent; and compressing the coagulated bean curd for molding. The colored sweet potato is orange sweet potato or purple sweet potato.

Abstract: PURPOSE: Provided is a dyeing method of fabric using pigment of a purple sweet potato(natural anthocyanin), which has strong dyeability and simplicity of color extraction and use, and of which mass production of material, normalization and industrialization of dye stuff are possible. CONSTITUTION: The dyeing process using natural anthocyanin is following the steps of: cutting cortex and flesh texture of a purple sweet potato, followed by grinding for 2 minutes; extracting pigment by using an extractant having mixed 1% of HCl with 100% of methanol at 30-40°C for 24hours; adjusting concentration of the extracted pigment between 10-300%(o.w.f.); repeated-dyeing a fabric at 30-90°C for 30-180min.; adjusting pH of dye stuff for needed color; and then mordanting. In accordance with needed color, pH is 1-3(red), 4-7(purple color), 7-8(violet color) and 10-12(orange color). Mordant dyeing is characterized by concentration of a mordant being 1-30%(o.w.f.) at 20-40°C for 20-60min. In accordance with needed color, the mordant is A1(purple color), Cu(orange color), Fe(gray), Sn(violet color) and Cr(brown).

Therefore, a filtration yield after fermentation is increased by using enzyme and yeast as potato alcohol fermenting agents.. CONSTITUTION: A method for preparing vinegar using a purple sweet potato comprises the steps of: peeling or roasting raw potatoes containing 10 to 50 wt.% of Ipomoea batatas (L.) Lamk; adding side ingredients such as unpolished rice and fermenting agents into the pre-treated potatoes and alcohol-fermenting the mixture at 30 to 35 deg. C and pH 5.0; and inoculating an acetic acid fermenting microorganism into the alcohol fermented mixture and acetic acid-fermenting the mixture, wherein the fermenting agents include liquefying enzyme and saccharifying enzyme.

Abstract: PURPOSE: A primer pair for diagnosing sweet potato virus and a diagnosis method using the same are provided to detect each virus and to specifically diagnose complex infection by four kinds of viruses through one-time RT-PCR. CONSTITUTION: A primer pair for diagnosing virus is selected among a primer pair with base sequences of sequence numbers 1 and 2; a primer pair with base sequences of sequence numbers 3 and 4; a primer pair with base sequences of sequence numbers 5 and 6; and a primer pair with base sequences of sequence numbers 7 and 8. The virus is selected among sweet potato leaf curl virus (SPLCV), sweet potato feathery mottle virus (SPFMV), sweet potato G virus (SPGV), and sweet potato latent virus (SwPLV). A method for diagnosing virus comprises the steps of: isolating RNA from a sample; performing RT-PCR of the RNA using the primer pair; and analyzing the RT-PCR product by each size.
