    Abstract: Functional rice using propoli and a manufacturing process thereof are provided to take the functionality of propolis more easily by coating the surface of rice with propolis. Functional rice using propoli improves the functionality by coating the surface of rice with propolis. The propolis is obtained from: (1) a step of pulverizing the refrigerated propolis raw material, adding ethanol(EtOH) and agitating it, wherein the precipitate formed within solution is removed with a filter; (2) a step of aging the ethanol solution dissolved with propolis at 20~25‹C for 6~12 months; (3) a step of removing the impurities in the ethanol solution dissolved with propolis, and keeping it in a freezer of -20‹C~-10‹C; (4) a step of manufacturing the first liquid propolis by removing a wax layer generated in the frozen propolis and thawing it; (5) a step of manufacturing water-soluble propolis by mixing the first liquid propolis with distilled water, agitating the mixture for 10~24 hours and removing the residual wax; and (6) a step of manufacturing the propolis solution by adding the water-soluble propolis in purified water and dissolving it.

    Abstract: A measuring method of rice quality by using bulk density is provided to obtain accurate milling(brown) ratio and improve rapidness and accuracy of measurement by using near infrared reflectance spectroscopy. The measuring method of rice quality by using bulk density comprises the steps of: obtaining the near infrared spectrum from a rice sample to be measured; preparing a measuring equation from correlation between the near infrared spectrum and milling(brown) ratio in the rice sample to be measured; obtaining the near infrared spectrum from a unknown rice sample to be measured; applying the analysis results of the near infrared spectrum into the measuring equation so as to calculate the milling(brown) ratio in the rice sample; and comparing the obtained milling(brown) ratio in the rice sample with the measurement standard table previously made on the basis of the bulk density of the rice sample, wherein the measuring equation is selected from the equations capable of minimizing inspection error and standard error.

    Abstract: Manufacturing process for loaf bread based on rice flour instead of wheat flour by using cellulose ether and gum is provided. Rice flour 1 { is mixed with 8-20g of cellulose ether such as ethylcellulose, benzylcellulose or carboxycellulose and 2-6g of gums such as xanthan gum or carageenan and subsidiary materials such as starch, salts, yeast, defatted milk powder, emulsifier and butter. The mixture is fermented and baked to give rice loaf bread. Also premix based on rice flour is provided. Rice loaf bread has the similar textures and tase to that of wheat flour.

    Abstract: PURPOSE: A milling deviation measurement method and device are provided to measure a milling degree by measuring a color rice bran area rate index of a rice specimen without NMG reagent processing, thereby simply and rapidly measuring rice bran remained in the rice specimen.
