    Abstract: PURPOSE:To easily obtain the subject compound having good color and odor by reacting a sugar with a higher alcohol and contacting the resultant reaction product for the production of alkyl glycoside and containing unreacted higher alcohol with a specific compound. CONSTITUTION:A sugar is made to react with a higher alcohol or a sugar is successively reacted with a lower alcohol and a higher alcohol to obtain a reaction product for the production of an alkyl glycoside and containing unreacted higher alcohol. The reaction product is brought into contact with a metal hydrogen complex compound of formula M(BH4)x (M is alkali metal, Ca, etc.; x is 1 when M is alkali metal, etc., and x is 2 when M is Ca, etc.) (preferably sodium borohydride) and the alkoxide and higher alcohol are separated by conventional process such as distillation to obtain the objective compound.
