Abstract: A process for the production of an alkyl glycoside or an aqueous solution thereof is disclosed, comprising the steps of (1) reacting a sugar with alcohol to obtain an alkyl glycoside reaction product containing unreacted alcohol, (2) establishing a moving liquid film of the alkyl glycoside reaction product and (3) contacting the moving liquid film with steam or an inert gas at a temperature of from 50 to 200 DEG C. The alkyl glycoside or aqueous solution thus obtained contains little unreacted alcohol and is excellent in hue and odor.

The scraping member 12 is held by nipping the small diameter part 8 by its own springing force. The resultant compound of formula II is reacted with an amine of formula III [R is a 1 to 20C alkyl, alkenyl or a (1 to 20C alkyl-substituted)aryl; R and R are each a 1 to 3C alkyl; Y is a 1 to 10C alkylene, B-(BO)n (B is 2 to 3C alkylene; n is 0 to 10); X is O, NH-CO, CO-NH, CO, O-CO, CO-O] and a polar solvent is added to the resultant reaction product. Or, the above-mentioned reaction is carried out in a polar solvent. The resultant sulfobetaine of formula IV is subsequently crystallized and separated so as to obtain the objective compound of formula IV in the form of fine crystals.
