    Abstract: PURPOSE: A method for producing conjugated linoleic acid(CLN) using Bifidus sp. strain is provided to naturally CLN and to enhance functionality of milk product. CONSTITUTION: A conjugated linoleic acid(CLN) is produced by culturing Bifidobacterium breve LMC520 (deposit number: KCTC 10455BP) in a medium containing linoleic acid. The linoleic acid is alpha-linoleic acid containing non-conjugated double bond at cis-9, cis-12, and cis-15. A fermented milk containing CLN is produced by culturing Bifidobacterium breve LMC520 in a milk or skim milk containing linoleic acid.

    Abstract: PURPOSE: A method for producing conjugate linoleic acid by fixed water pressure is provided to reduce trans fatty acid by ultrasonication of microorganisms and to procuce various products. CONSTITUTION: A method for producing CLA comprises: a step of performing HHP(High hydrostatic pressure) to a medium containing microorganisms with CLA productivity; a step of adding a substrate to the medium; and a step of collecting CLA from the microorganism and medium. The microorganism with CLA productivity is Bifidobacterium breve or Propioni-bacterium freudenreichii. The substrate is oil containing linoleic acid.
