Abstract:
The combination of potato protein, intact rice protein and hydrolyzed rice protein, replaces a portion of the vegetable protein in a nutrition shake or other nutritional composition intended for oral consumption. By suitable selection of the types and amounts of these proteins the overall cost of manufacturing the nutritional composition can be reduce without adversely affecting its other desirable properties such as nutritional value, stability, taste and mouthfeel.

The present disclosure is directed to a nutritional powder, a translucent reconstitutable beverage formed therefrom, and methods relating thereto. The nutritional powder and beverage are adapted to include the proper balance of proteins, lipids, carbohydrates, vitamins and minerals appropriate for a pregnant woman. The nutritional compositions further stem the glycemic response and improve glycemia and insulinemia during gestational and lactating periods for preventing or reduce the incidence of glucose intolerance later in life.

Liquid nutritional compositions comprise at least about 125 mg/ml of a protein system comprising, based on the weight of the protein system, less than 40 wt % micellar casein, greater than 15 wt % non-micellar casein, whey protein, whey protein hydrolysate, and partially hydrolyzed collagen. The liquid nutritional compositions further comprise at least about 5 mg/ml of β-hydroxy β-methylbutyrate (HMB), fat, and carbohydrate. The liquid nutritional compositions have a zero shear rate viscosity greater than 100 cp, an infinite shear rate viscosity of less than 200 cp, and a ratio of zero shear rate viscosity to infinite shear rate viscosity of greater than about 1.5.

A nutrient delivery system includes a protein system, calcium, zinc, and iron. The protein system includes a calcium binding protein in an amount of 40% to 75% by weight of the protein system, a zinc binding protein in an amount of 10% to 30% by weight of the protein system, and an iron binding protein in an amount of 10% to 30% by weight of the protein system. The calcium binding protein and the calcium are present in a weight ratio of 13:1 to 25:1, the zinc binding protein and the zinc are present in a weight ratio of 6:1 to 900:1, and the iron binding protein and the iron are present in a weight ratio of 5.4:1 to 800:1.

Low lactose nutritional compositions and methods of producing low lactose nutritional compositions are provided. The methods include producing an initial nutritional composition comprising protein, carbohydrate, fat, and minerals. At least one high lactose protein source is utilized to provide 30-100% by weight of the total protein in the initial nutritional composition. Lactase is added to the initial nutritional composition to digest the lactose in the initial nutritional composition to form a low lactose nutritional composition.
