Abstract: PURPOSE:To obtain a foaming oil-in-water type emulsion useful for whip cream, having excellent mechanical resistance and heat resistance, comprising an oil phase composed of fats and oils containing a specific saturated fatty acid and a glycerol fatty acid ester, etc., containing a specific saturated fatty acid as a lipophilic emulsifying agent and a water phase. CONSTITUTION:3-50wt.% of an oil phase comprising fats and oils (high-erucin colza oil) composed of a constituent fatty acid residue containing 5-70wt.% of a 20-24C saturated fatty acid (e.g. behenic acid) and one or more of glycerol fatty acid ester, sucrose fatty acid ester, sorbitan fatty acid ester, polyglycerol fatty acid ester and propylene glycol fatty acid ester composed of a constituent fatty acid residue of a 20-24C saturated fatty acid (e.g. behenic acid) is blended with 97-50wt.% of a water phase comprising water and an aqueous solution containing skimmilk powder, sodium caseinate, sucrose fatty acid ester or hexametaphosphate to give the objective foaming oil-in-water type emulsion useful for whip cream, etc., having excellent mechanical resistance and heat resistance.

Abstract: PURPOSE:To obtain the subject product composed of an oil and fat containing a specific triglyceride of mixed acids compounded with a specific flavor improving agent and excellent in emulsion stability, foamability, whip characteristics, dewatering resistance, external appearance, eat feeling dispersibility in coffee, etc. CONSTITUTION:The objective product is composed of (A) an oil and fat containing 5-70wt.% of a triglyceride of mixed acids consisting of a >=C20 saturated aliphatic acid residue together with a >=C18 unsaturated aliphatic acid residue (preferably monobehenyl dioleate, etc.), (B) an emulsifier, (C) a milk protein and (D) a flavor improving agent composed of a conjugate of a lipid and a protein. A triglyceride in the component A can be obtained by ester interchange reaction of a mixture of, e.g. 50% triglyceride of behenic acid and 50% olive oil. A phospholipid such as lecithin is preferable as the lipid of the component D and e.g. casein, etc., are used as a protein. It is preferable to use together with lecithin, a monoglyceride and an aliphatic acid ester of sucrose as the component C.
