Abstract: PURPOSE: A producing method of salted squid containing salt obtained from deep sea water is provided to prevent the breeding of deterioration causative bacteria of the salted squid. CONSTITUTION: A producing method of salted squid containing salt obtained from deep sea water comprises the following steps: removing the moisture from squid slices, and adding the salt obtained from the deep sea water; salting the mixture in a low temperature aging chamber at 0-20 deg C for 1-60 hours before washing; adding sugar and starch syrup into the washed squid slices, and sugar-soaking the squid slices at 1-50 deg C for 1-30 hours; mixing a seasoning liquid with the sugar-soaked squid slices; and low temperature aging the seasoned squid slices at 0-15 deg C for 1-20 days.
