A method for preparing fried fish paste using Hypoptychus dybowskii, propolis and sweet pumpkin is provided to prevent acidification, to show excellent taste, flavor, color and texture and to extend the shelf life. A method for preparing fried fish paste comprise the following steps of: removing the internal organs from Hypoptychus dybowskii; successively adding salt, starch, strong flour, medium flour, finely chopped garlic and ginger powder while cutting Hypoptychus dybowskii and putting propolis, sweet pumpkin powder and ice water to the mixture; mixing up the mixture for 1-60 minutes; molding the dough to a predetermined size; frying the moldings in a soybean oil of 100-200‹C for 30-600 seconds; cooling off the fried fish paste down to 15-20‹C and vacuum-packaging it; and keeping the product at 2-7‹C. The mixing ratio of Hypoptychus dybowskii, propolis, sweet pumpkin powder, salt and starch is 50-95.5 : 0.1-1 : 0.1-10 : 0.1-2 : 1-10.
