본 발명은 알칼라아제, 알카라인 프로테아제, 브로멜라인, 파파인, 칼루풀린, 프로타멕스 및 이들의 조합으로 구성된 군으로부터 선택되는 단백질 분해효소를 메밀과 접촉시키거나 메밀에 90-180℃의 열을 가하여 메밀의 알레르기 항원성을 저감시키는 방법에 관한 것이다. 본 발명에 따르면, 본 발명의 방법에 의하여 메밀 단백질 중 메밀 알레르기 항원성을 가지는 단백질을 전 범위를 제거할 수 있는 이점이 있다. 따라서 본 발명은 식품 알레르기 중의 하나인 메밀 알레르기 질환의 예방에 크게 기여할 수 있다.

The present invention relates to prebiotics containing extracts of persimmon leaves for promoting probiotic bacteria proliferation and suppressing growth of pathogenic bacteria. According to the present invention, as a water extract of the persimmon leaves is treated to promote the proliferation of probiotic bacteria and an ethanol extract of the persimmon leaves is treated to suppress growth of intestinal pathogenic bacteria, the prebiotics containing the extracts of persimmon leaves can control the growth of both probiotic bacteria and pathogenic bacteria. The extracts of persimmon leaves also can have an antioxidant effect by having a superior ability in electron donation.

PURPOSE: An antihypertensive natural seasoning containing yellow dried pollack hydrolysate, and a producing method thereof are provided to offer improved taste to food. CONSTITUTION: An antihypertensive natural seasoning contains 5-15wt% of dried skipjack powder, 5-15wt% of sea tangle powder, 1-5wt% of garlic powder, 10-15wt% of anchovy powder, 5-10wt% of manila clam powder, 10-15wt% of shrimp powder, 5-15wt% of beef powder, 10-15wt% of lentinus edodes powder, 3-5wt% of yellow dried pollack powder, and 5-25wt% of yellow dried pollack hydrolysate. The yellow dried pollack hydrolysate is obtained by hydrolyzing yellow dried pollack powder at 64-66 deg C for 3.5-4.5 hours using alcalase, and vacuum drying the outcome.

A method for isolating the strain comprises: a step of a step of smearing the raw milk on the modified MRS medium and culturing for 37 degrees Celsius for 48 hours; a step of purely isolating the modified MRS medium and selecting yellow colony; a step of smearing the stain and culturing in aerobic condition; and a step of inoculating the strain into 10% reduced non-fat milk and culturing at 37 degrees Celsius for 24 hours.
