    Abstract: The present invention relates to a novel esterase RLES1 enzyme derived from deposit soil in deep sea of Dokdo island. The novel esterase RLES1 enzyme according to the present invention is an enzyme derived from an uncultured microorganism which cannot be cultured in a conventional method, and the enzyme can maintain a lot of esterase activation even under high temperature and an alkali state. Therefore, the enzyme can be primarily used as a high temperature hydrolase for lipolysis and can be useful in an industrial field like food processing of adjusting flavor of foods according to properties of enzyme and manufacturing of new drugs by optical activation.
