The present invention provides a fermented milk composition containing hydrolysate of gelatin and a production method thereof. As the drawings and charts of the present invention, the fermented milk composition containing the hydrolysate of gelatin has a remarkably improved effect on the bone health especially the proliferation of osteoblast, and the weight and mineral content increase of thighbones. Through said effects, the fermented milk composition promotes the growth of children, and prevents osteoporosis of users of old age or women. PURPOSE: Novel lactic acid bacteria, Lactobacillus salivarius, which suppress antibiotic resistant Staphylococcus and Salmonella isolated from poultry excreta is provided to prevent pathogens from being infected to humans through livestock or livestock food products, and to be used in various fields such as probiotics and health functional foods. CONSTITUTION: Lactobacillus salivarius (deposit number: KACC 91656) has 16 rRNA of sequence number 1. The strain suppresses antibiotic resistant Staphylococcus and Salmonella. Probiotics contain the strain. A meat improvement method is provided, which improves quality of the meat and reduces aging period of meat and the energy consumption required for the meat cooling. A meat improvement method comprises: a step for first cooling meat for 3 ~ 5 hours at -1 ~ 4deg.C after slaughter; a step for second cooling the cooled meat for 3 ~ 5 hours at 10 ~ 14deg.C; and a step for third cooling the cooled meat for 14 ~ 18 hours at -1 ~ 4deg.C. The second cooling is formed to appropriately control the post metabolism speed and to improve the meat.
