PURPOSE: A Weissella sp. strain with an effect of enhancing immunity is provided to enhance NO generation of macrophages and T cell activation and to manufacture food, pharmaceutical, enteric, probiotic, and feed composition without cytotoxicity. CONSTITUTION: A food composition for enhancing immunity contains Weissella viridescens K040708(deposit number: KCCM11224P) strain or crushed materials or a culture thereof as an active ingredient. An enteric, probiotic, or feed composition or fermentation product contains the strain, crushed material, or culture thereof as an active ingredient.

PURPOSE: A method for extracting zingiberene from ginger is provided to obtain components with anti-oxidizing characteristic, antibiotic characteristic, and aromatic characteristic by implementing an extracting operation with respect to ginger under supercritical extracting conditions. CONSTITUTION: A method for extracting zingiberene from ginger includes a process in which zingiberene is supercritically extracted from a zingiberaceous plant under a pressure between 50 and 150 bar and a temperature between 60 and 70 degrees Celsius. The zingiberaceous plant is one selected from a group including turmeric, ginger, and zingiber mioga.

PURPOSE: A method for extracting antibacterial active ingredients from Zingiber officinale Roscoe by supercritical extraction is provided to effectively obtain the antibacterial antioxidative ingredients. CONSTITUTION: A method for antibacterial active ingredients against Listeria sp. comprises a step of supercritical extraction of Zingiber officinale Roscoe at 200-300 bar and 30-40 Deg. C. Zingiber officinale Roscoe includes Zingiberis Rhizoma crudus, Curcumae longae Rhizoma, or Zingiber moiga Roscoe. The Listeria sp. includes L.monocytogenes.

PURPOSE: A producing method of Korean style boza(Turkish drink), and the Korean style boza are provided to improve the palatability of the boza to Korean consumers. CONSTITUTION: A producing method of Korean style boza(Turkish drink) comprises the following steps: stirring a mixture of water and grains, and heating the mixture; cooling the mixture, and adding more water before mixing and filtering; inserting a sweetener and a starter into the filtrate for saccharifying and fermenting at 20-40 deg C for 20-72 hours. The grains are selected from the group consisting of white rice, glutinous rice, black rice, and brown rice.

PURPOSE: A composition containing Ganoderma resinaceum KFRI-M101(KFCC 11429P) is provided to increase AMPK activity, to lower blood glucose, and prevent and treat diabetes. CONSTITUTION: A Ganoderma resinaceum KFRI-M101(KFCC 11429P) is used for metabolism of ginsenoside ingredient. A composition for preventing and treating contains ginseng fermentation which is obtained by fermenting ginseng with Ganoderma resinaceum KFRI-M101(KFCC 11429P) at 20°C-30°C and 40-80% of moisture for 2-8 weeks. The composition also contains ginseng extract as an active ingredient, which is obtained by isolating the ginseng fermentation with water, ethanol, or mixture thereof at 90-110°C for 2-4 hours. The composition is a health food.
