본 발명은 새로운 기능성 균주 선발에 관한 것으로, 더 자세하게는 유아 분변으로부터 분리되며 내산성, 담즙산 내성, 장 부착능력, 콜레스테롤 저하 및 비만을 억제하는 기능이 있어 체중조절식품, 음료수 등과 같은 식품 조성물, 건강기능식품, 약품 조성물 등 광범위하게 이용될 수 있는 새로운 프로바이오틱스 균주 선발에 관한 것이다.

본 발명은 초미립 분쇄한 쌀 단백질을 엔도펩티데이즈 및 엑소펩티데이즈로 순차적으로 분해하여 고체상과 액상을 분리한 후, 상기 액상을 여과, 분말화하는 것을 특징으로 하는, 분지쇄 아미노산(Branched chain amino acid: BCAA)이 높이 함유된 이물감 없는 쌀 단백질 가수분해물을 제조하는 방법에 관한 것이다. 본 발명은 운동능력 강화 및 단백질 합성에 도움을 주는 것으로 알려져 있는 분지쇄 아미노산을 식물성 단백질인 쌀 단백질로부터 간편한 효소분해 공정을 활용하여 가수분해물을 제조했다는 특징이 있다.

PURPOSE: A method for preparing modified nuruk for makkoli(Korean rice wine) is provided to obtain makkoli with rich taste and flavor by making ipguk(Japanese koji) using Aspergillus kawachii. CONSTITUTION: A method for preparing modified nuruk comprises: a step of steaming, drying and pulverizing grains at 5-40 mesh; and a step of mixing 100 parts by weight of pulverized grains, 20-40 parts by weight of water, and 1-10 parts by weight of a culture medium of Aspergillus oryzae NS 1101(KFCC11517P). The grains are soft wheat. The size of the modified nuruk is 1-2.5 cm. The method also comprises a step of fermenting the modified nuruk at 20-35 deg. C and a humidity of 50-95% for 72-360 hours.
