본 발명은 착즙 단계; 효소반응 단계; 및 발효 단계를 포함하는 감귤 발효식품의 제조 방법에 관한 것으로서, 본 발명을 통하여 효소 가수분해를 통해 플라보노이드 무배당체 함량이 증가되고, 감귤 가수분해물을 이용함으로써 기능성이 향상된 감귤 발효주를 제공한다.

PURPOSE: A flavor enhancement composition and a method of flavor enhancement thereof are provided to enhance flavor, functionality, and preference. CONSTITUTION: A flavor enhancement composition comprises lard which is supercritical-extracted. The supercritical extraction is performed at 30-50°C, and 5000-9000 psi. The flavor enhancement composition additionally comprises Mailard reaction products (MRP). The flavor enhancement composition comprises ribose and low Glu wheat gluten acid-hydrolysed product as substrates, and contains at least a precursor selected from a group comprising cysteine, garlic extract powder, and mushroom powder which is enzyme-processed with protease. The sodium chloride content of the low Glu wheat gluten acid-hydrolysed product is controlled within 2-10wt%. The low Glu wheat gluten acid-hydrolysed product is produced by segregating glutamic acid.

PURPOSE: A food quality predicting method using a microorganism growth model is provided to supply a predicted number of microorganisms to a user by predicting the number of microorganisms without measuring the number of microorganisms. CONSTITUTION: A food quality predicting server(110) provides an identifier of an RFID(Radio Frequency Identification System) tag(130) provided from a user terminal(120) and receives atmospheric information corresponding to the RFID tag from a product distribution record database. The food quality predicting server calculates the quality information about a corresponding product using a product quality algorithm and the atmospheric information and provides the quality information to the user terminal. The food quality predicting server calculates the number of microorganisms included in the product using the temperature information. An ID information input unit(120) inputs cultivator ID information of a rice. A distribution information managing unit(140) matches location information with cultivator ID information.
