PURPOSE: A composition containing dried powder or extract of chub mackerel fraction is provided to ensure activation of SOD(superoxide dismutase), catalase, and glutathione peroxidase activation, prevent and treat oxidation-relating diseases. CONSTITUTION: A pharmaceutical composition for preventing and treating oxidation-related diseases contains dried powder or extract of chub mackerel fraction as an active ingredient. The oxidation-related diseases are cancer, diabetes,, artery scleroma, hepatitis, gastritis, nephritis, inflammation of the heart, rheumatoid arthritis, heart disease, acquired immune deficiency syndrome, cataract or dermatoma. A method for producing the dried powder of chub mackerel fraction comprises: a step of washing the chub mackerel to remove foreign materials and salt; a step of cutting into whole body of the fish, skin, head, fin, bone, cartilage, muscle, eye and gill; and a step of performing freeze-drying or sun drying. The extract of chub mackerel fraction is obtained through pulverizing, pressing or extracting with a mixer or extracting with water, alcohol or spirit solvent. A composition of a feed for fish farming separated from liquid waste from mackerel processing capable of using a protein source as a substitute for fish meal is provided to replace the fish meal which is the protein source of the feed for fish farming. A composition of a feed for fish farming is separated from the mackerels processing waste water and includes the water-soluble protein usable as fish meal substitution protein. The mackerels processing waste water is the waste water coming from the mackerels processing plant. The water-soluble protein is separated from the mackerels processing waste water through isoelectric precipitation. The water-soluble protein is added so that it become 30 percent of the total fish meal. The mackerels comprises one or more mackerelses selected from the group of the Scomber japonicus and Scomber australasicus.

A method for culturing a microalgae using deep sea water is provided to dramatically increase the amount of the microalgae and shorten culture time. A method for culturing a microalgae using deep sea water comprises: a first step of preparing f/2 medium containing deep sea water; a second step of culturing in an Erlenmeyer flask at 1-2000 lux and 10-30°C for 1-15 days; and a third step of adding medium of the first step and adjusting the air amount (30 L/min) without carbon for 1-30 days. The deep sea water is from east sea. The microalgae is cyanophyceae, bacillariophyceae, or dinoflagellate.

A method of manufacturing soybean curd is provided to prepare soybean curd with higher strength, elasticity and to maintain quality than conventional soybean curd. Soybeans are washed and soaked in water at 10 to 30deg.C for 5 to 15hr, dried, mixed with 8 to 10 times the volume of distilled water for 1 to 6min and ground with a mixer to give soybean water. The soybean water is strained with a cotton cloth, mixed with 3 to 5 times the volume of distilled water and strained with a cotton cloth to give soybean milk. The soybean milk is coagulated with bittern containing chitosan for 1 to 6min, pressed for 15 to 25min, soaked in flowing water for 15 to 25min and left alone on a plate for 10 to 20min.

A method of preparing Kimchi with improved quality and keeping quality by soaking Chinese cabbage in deep sea water instead of a salt solution and mixing with seasonings is provided to give organic salts and minerals in large quantities. Chinese cabbage is cut into two or three pieces and soaked in deep sea water with a salinity of 10 to 15% for 4 to 6hr. The salted Chinese cabbage is soaked in 2 to 3 times the weight of water for 5 to 6hr, washed with clean water, dehydrated, mixed with seasonings and aged for 1 to 2 days. The seasonings contain 80 to 90% by weight of vegetables, 1.0 to 2.0% by weight of radishes with a size of 3.5 to 4.5cm, 1.5 to 2.5% by weight of Welsh onions with a size of 3.5 to 4.5cm 0.5 to 1.0% by weight of ginger, 1.0 to 2.0% by weight of garlic, 2.0 to 4.0% by weight of red pepper powder, 0.5 to 1.5% by weight of sugar and 2.0 to 3.0% by weight of salted anchovies.

The present invention relates to a method for manufacturing a standardized fermented squid having an optimized quality and storability. The fermented squid manufactured by the method of the present invention pursues a uniform quality upon production. Techniques of stabilizing product quality comprising palatability and health-promotional properties, etc. are researched to develop a standardization technique that enhances the quality of squid products, thereby contributing even to vitalization of a regional economy.
