The present invention relates to a method for producing chitosan with enhanced anti-oxidation activity and anti-bacterial activity. Chitosan (g-chitosan) produced from ground crab shells has a lower ash content and a higher deacetylation degree, solubility, and viscosity compared to chitosan produced from whole crab sells and has an outstanding anti-oxidation activity and antibacterial activity, and thus can be provided as a proper material for antibacterial compositions or food.
Abstract:
The present invention relates to a method for producing chlorella powder which comprises: (a) a step of adding ethanol in chlorella powder, extracting, filtering, vacuum-evaporating, and then freeze drying; (b) a step of adding water in the freeze-dried chlorella powder, manufacturing it to solution, adding maltodextrin in the manufactured solution, and spray drying the mixed mixture using a spray dryer and chlorella powder manufactured by the method. Chlorella powder manufactured by the present invention provides chlorella powder efficiently extracting chlorophyll which is a function substance and having excellent antioxidant activity and storage safety.

The present invention relates to a method for manufacturing beta-chitosan having increased viscosity and physicochemical bonding strength from a cartilage of a squid, which has an effective efficacy of providing the chitosan manufacturing method by an elimination of an ash rejection step to reduce the use of chemicals, reduce the process time, and reduce the massive wastewater discharge, to reduce the chitosan manufacturing cost.

The present invention relates to a method for microcapsulating β-carotene and a β-carotene microcapsule produced through the method, wherein the method comprises the steps of: (a) producing an emulsified liquid by adding and homogenizing β-carotene and an emulsifier in a chitosan solution; and (b) spraying and drying the emulsified liquid produced in the step (a).
