플라즈마 처리한 채소 및 난백의 혼합물을 포함하는 아질산염 대체제로써, 상기 아질산염 대체제를 포함하는 식품 및 아질산염 대체제를 식품의 원료와 혼합하여 식품 유화물을 제조하는 단계;를 포함하는 것인 식품의 제조방법을 제공한다. 상기 아질산염 대체제의 첨가한 식품은 식미의 불쾌감 없이 기존의 식품들과 유사한 색도 및 효과를 재현할 수 있다.
Abstract:
본발명은플라즈마를이용하여식물추출물또는식물분쇄물내 아질산이온을생성하는방법에관한것이다. 구체적으로, 본발명의방법으로제조된플라즈마를처리한소엽추출물또는식물분쇄물은내부에아질산및 질산이다량생성됨으로써우수한항균활성을나타낼수 있다. 따라서상기플라즈마를처리한식물추출물은천연아질산첨가물뿐만아니라, 아질산이갖는약리학적활성을이용한조성물로서유용하게사용될수 있다.

PURPOSE: A method for analyzing SNP of SCD(Stearoyl-CoA Desaturase) gene of a chicken is provided to produce and select high quality chickens, to improve farm income, and to increase sales. CONSTITUTION: A method for selecting a chicken with higher unsaturated fatty acid content than a chicken with heterozygous genotype at 2nd exon of chicken SCD gene comprises: a step of collecting a DNA sample from the chicken; a step of amplifying the DNA sample using the primer set of sequence numbers 1 and 2; a step of treating the amplified product with Acil; and a step of performing electrophoresis and identifying whether SNP of the 2nd exon of SCD is a homozygous genotype.

The present invention relates to a preparation method of flavonoid-based phenol compounds with enhanced antioxidant, lightening, and antibacterial activity by a low temperature atmospheric pressure plasma treatment. The present invention can improve a physiological functionality of vegetable flavonoid-based phenol compounds by using the plasma treatment. Therefore, the flavonoid-based phenol compounds with enhanced physiological functionality can be used for functional foods having antioxidant and lightening capabilities; a pharmaceutical composition for prevention or treatment of disease generated by an oxidation process of active oxygen; and the manufacture of an antibacterial product and a cosmetic product.

A composition for preventing and treating hyperlipidemia and obesity, which contains an octadeca-9,12-dienyl-3,4,5-trihydroxybenzoate as an active ingredient is provided to suppress weight gain and hypertrophy of liver. A composition for preventing and treating hyperlipidemia or obesity comprises an octadeca-9,12-dienyl-3,4,5-trihydroxybenzoate (GLE) of chemical formula 1 as an active ingredient. A method for synthesizing GLE comprises: a step of resolving linoleic acid methyl ester in CH2Cl2 and cooling at -78‹C; a step of adding DIBAL-H and stirring for one hour; a step of decompression with a Whatman paper (No.1); a step of purifying through SiO2 column chromatography to obtain 90% of octadeca-9,12-diene-ol; a step of adding DCC; a step of stirring for 20 hours and concentrating; a step of filtering concentration residues with EA; a step of washing with 5% citric acid solution, saturated NaHCO3 solution, and water; and a step of purifying through SiO2 column chromatography.

A method for increasing the foaming capacity of egg products using radiation and a processed foodstuff using the same are provided to show excellent foaming capacity as well as foam stability, thereby improving processability. A method for increasing the foaming capacity of egg products comprises the following steps of: irradiating radiation to eggs; and forming foam. The eggs represent fresh eggs with egg shells or processed eggs. The processed eggs indicate liquid whole eggs, liquid egg white, liquid egg yolk, whole egg powder, egg white powder or egg yolk powder. The irradiation of gamma ray, electron ray or X-ray at a dose rate of 0.5~5 kGy is performed. The method for foaming eggs is selected among a shaking method, an air blowing method and a stirring method.
