Abstract: The present invention relates to a method for preparing β-glucan from mushrooms. The present invention can obtain β-glucan in a high yield through a series of steps of the preparation of mushroom microparticles through first crude grinding and second fine grinding processes, and ultrasonic extraction and heat extraction thereof, and is thus economical. In addition, alkaline neutralization which is a problem of a conventional alkaline treatment extraction, and environmental pollution caused thereby can be solved. Therefore, the present invention can be useful for preparing β-glucan, and the prepared β-glucan can be useful for preparing medical supplies, cosmetics, dietary supplements, and food.

Abstract: The present invention relates to a method for making a mulberry pudding containing mulberry with an original form and a mulberry pudding made thereby. The method according to the present invention comprises the steps of: (a) mixing mulberry and white sugar, heating the mixture in a double boiler at 70-90°C, and sugaring the mixture in a sterilized bottle for 10 to 20 days; (b) immersing the sugared mulberry in an alginate solution to coat the mulberry; (c) immersing and then drying the coated mulberry in calcium chloride to prepare mulberry with an original form; (d) preparing a pudding liquid containing a mulberry extract, plate gelatin, a fruit concentrate, hydrous crystalline glucose, sugar, additives; and (e) placing the pudding liquid in a container, and adding mulberry with an original form, followed by gelation. The mulberry pudding made by the method has excellent flavor and taste and can be longer stored as compared with the existing puddings.

Abstract: PURPOSE: Chitosan-tripolyphosphate(TPP) nano-particles and a method for manufacturing the same are provided to adjust the size of chitosan nano-particles and to reduce the coagulating phenomenon of the chitosan nano-particles by changing a homogenizing condition, an organic solvent, and a cross-linking agent in a nano-emulsion manufacturing process. CONSTITUTION: A method for manufacturing chitosan-tripolyphosphate nano-particles includes the following: A solution, in which a material to be collected in dichloromethane is dissolved, is applied to aqueous chitosan solution. An oil-in-water emulsion is formed by stirring and homogenizing the chitosan solution. The oil-in-water emulsion is mixed and reacted with TPP as a cross-linking agent. Dichloromethane is eliminated. The concentration of the aqueous chitosan solution is between 1.0 and 10.0%(w/v). The material to be collected in dichloromethane is s-allylcysteine, lycopene, beta-carotene, ellagic acid, anthocyanin, genistein, glutathione, and capsaicin.
