Abstract: PURPOSE: A method for preparing glycosides of caffeic acid using glucansucrase is provided to use in food, cosmetics, and medicines. CONSTITUTION: A caffeic acid glycosides is prepared using sugar with glucansucrase. The glucansucrase is obtained from Leuconostoc mesenteroides B-512FMCM. The enzyme reaction is performed at 28°C for 12 hours by adding glucansucrase in a solution containing 0.1-1M of sugar. The caffeic acid glycosides enhances suppression of colon cancer cell line growth.

Abstract: PURPOSE: A producing method of a quercetin extract from onion, and a use of the quercetin extract are provided to obtain quercetin from wasted onion skin. CONSTITUTION: A producing method of a quercetin extract from onion comprises the following steps: collecting three layers of the skin from the harvested onion, and drying and crushing the skin to obtain onion skin powder having the particle size of 30-10 meshes; mixing the onion skin powder with 8-12 times the amount of alcohol, and repeatedly reflux-extracting the mixture at 70-100 deg. C for 2-4 hours to obtain an onion skin alcohol extract and residues; removing the alcohol from the onion skin alcohol extract, and adding a mixed solvent containing ethyl acetate and water before setting the mixture at 3-5 deg. C for 12-24 hours; collecting an ethyl acetate layer produced on supernatant before evaporating the solvent, and dissolving the layer in the alcohol; collecting precipitates from the middle and the lower side of the onion skin extract mixture, and dissolving the precipitates in the alcohol; and mixing the two alcohol-dissolved mixtures.
