PURPOSE: A microorganism Lactobacillus fermentum and a method for producing conjugated linoleic acid(CLA) using the same microorganism are provided, which microorganism can be used in food because the microorganism is isolated from human, and which conjugated linoleic acid(CLA) has anticancer activity, antioxidative activity, cholesterol reduction, immunity improvement, fat reduction and muscle improvement. CONSTITUTION: The microorganism Lactobacillus fermentum(KACC 91008) is isolated from the feces of human and produces conjugated linoleic acid(CLA), The method for producing conjugated linoleic acid(CLA) comprises the steps of: culturing Lactobacillus fermentum in a medium for 24 hours; adding linoleic acid and tween 80 into the medium; and culturing the medium for 24 hours, thereby the medium contains 0.30 to 0.39 mg of CLA.

PURPOSE: A process of preparing egg white protein hydrolysate improved in flavoring by hydrolyzing egg white protein with protease is provided. Whereby, the product is not decomposed in the body by angiotensin converting enzyme while having excellent inhibitory activity on angiotensin converting enzyme, has excellent antihypertensive properties, is convenient to eat and can be used as a protein supply source. CONSTITUTION: A protease is added to an aqueous egg white protein solution in the amount of 0.1 to 5% and reacts at 30 to 50deg.C and a pH of 6 to 9 for 4 to 48hr. The protease is one or more selected from the group consisting of Protamex(derived from Bacillus), MP(Aspergillus melleus), LP(Aspergillus oryzae), Flavourzyme(Aspergillus oryzae), neutrase, alcalase, Bacillus licheniformis, Promod 192(derived from Aspergillus). For example, egg white is dissolved in water at 55 to 60deg.C, cooled and added with 1% Protamex at a pH of 7. Then the solution reacts at 47deg.C for 28hr and is maintained at 90deg.C for 15min to inactivate enzyme.

As the drawings and charts of the present invention, the fermented milk composition containing the hydrolysate of gelatin has a remarkably improved effect on the bone health especially the proliferation of osteoblast, and the weight and mineral content increase of thighbones. Through said effects, the fermented milk composition promotes the growth of children, and prevents osteoporosis of users of old age or women. 본 발명은 식중독균 검출용 프로브, 프로브 세트 및 이를 이용한 식중독균의 검출방법에 관한 것이다. 본 발명에 의한 식중독균의 존재를 검출하는 방법은 본 발명에 의한 식중독균 검출용 프로브를 사용하여 MLPA 방법에 의하여 프로브 어셈블리를 증폭하고, 증폭 산물에 대해 CE-SSCP (Capillary Electrophoresis-Single Strand Conformation Polymorphism)를 이용하여 분리 검출하는 것으로 구성되어, 각각의 프로브가 검출하고자 하는 식중독균에 대해 하나의 피크만을 나타내는 특이성이 있으므로 검출이 정확할 뿐만 아니라, 식중독균 감염 여부 및 감염균을 확인하고자 할 경우 복수의 식중독균에 대해 동시에 신속하고 정확하며 효과적으로 검출 및 동정이 가능하게 된다.

PURPOSE: Novel lactic acid bacteria, Lactobacillus salivarius, which suppress antibiotic resistant Staphylococcus and Salmonella isolated from poultry excreta is provided to prevent pathogens from being infected to humans through livestock or livestock food products, and to be used in various fields such as probiotics and health functional foods. CONSTITUTION: Lactobacillus salivarius (deposit number: KACC 91656) has 16 rRNA of sequence number 1. The strain suppresses antibiotic resistant Staphylococcus and Salmonella. Probiotics contain the strain. A method for identifying a strain which suppresses antibiotic resistant Staphylococcus and Salmonella isolated from poultry excreta comprises the steps of: collecting the poultry excreta; isolating strains; checking the activity of antibiotics in the isolated strains; and identifying base sequences of the isolated strains. PURPOSE: A composition for improving cognitive ability and a method for manufacturing the same are provided to develop anti-dementia material using pork rind. CONSTITUTION: A composition for improving cognitive ability contains gelatin-derived enzymatic lysate as an active ingredient. The gelatin is derived from pork rind. The enzyme is alcalase, protamex, or flavorzyme. A method for preparing the composition comprises: a step of hydrolyzing gelatin to prepare a gelatin solution; a step of adding enzyme to the gelatin solution and performing lysis at pH 6-9 and 30-60°C for 2-24 hours; and a step of desalting the enzyme lysate.
