PURPOSE: A colored potato beverage composition and a producing method thereof are provided to secure the excellent functionality and storage property of the composition. CONSTITUTION: A colored potato beverage composition contains juice of colored potatoes. A producing method of the colored potato beverage composition comprises the following steps: removing embryos from the colored potatoes, and washing off foreign substances; cutting the colored potatoes, parboiling the colored potatoes for sterilizing, and crushing under the presence of vitamin C; and juicing the crushed color potatoes.

PURPOSE: A novel Enterococcus faecalis K-60(KFCC11460P) is provided to maintain glucose homeostasis and to treat diabetes. CONSTITUTION: A novel Enterococcus faecalis K-60 strain(KFCC 11460P) is used for fermenting ginseng. A method for preparing the ginseng fermentation extract comprises: a step of fermenting ginseng with Enterococcus faecalis K-60 strain to obtain a fermentation; and a step of extracting the fermentation with a solvent and filtering. A pharmaceutical composition for maintaining or improving glucose homeostasis contains the ginseng fermentation extract. A health food for maintaining or improving glucose homeostasis contains ginseng fermentation extract.

PURPOSE: Acanthopanax senticosus eggs and a producing method thereof are provided to offer the excellent functionality to the eggs using an acanthopanax senticosus extract. CONSTITUTION: Acanthopanax senticosus eggs are produced by feeding an acanthopanax senticosus extract or its organic solvent separated product. The acanthopanax senticosus eggs contain gamma amino butyric acid inside egg yolks. The acanthopanax senticosus extract is obtained by using water, C1~C4 alcohol, or a C1~C4 alcohol water solution.

PURPOSE: A composition, yoghurt and bean curd containing Hypsizigus marmoreus extract for preventing and treating diabetes is provided to suppress alpha-amylase and glucosidase without side effects. CONSTITUTION: A composition for preventing or treating diabetes contains Hypsizigus marmoreus extract as an active ingredient, which is isolated using water, ethanol or mixture thereof. The Hypsizigus marmoreus extract is isolated using solvent at 50-100°C for 5-20 hours. The Hypsizigus marmoreus extract is a fraction which is obtained by removing low molecular material from the Hypsizigus marmoreus extract. The molecular weight of the low molecule is less than 20kDa. The Hypsizigus marmoreus extract is contained in 1-30 weight parts based on total composition. A yoghurt for preventing and treating diabetes contains the composition as an active ingredient. A bean curd for preventing and treating diabetes contains the composition or Hypsizigus marmoreus as an active ingredient.

PURPOSE: A method for preparing semi-fermented tea comprising persimmon leaf is provided to obtain excellent taste properties, to use pharmacological activities of the persimmon leaf, and to contribute to the increase the income of farmers. CONSTITUTION: A method for preparing semi-fermented tea comprising persimmon leaf comprises the following steps: drying the persimmon leaves; roasting the dried persimmon leaves; rolling the roasted persimmon leaves for 5 ~ 10 minutes until juice is generated; drying the rolled persimmon leaves at 90 ~ 110°C for 5 ~ 15 minutes using hot air; wilting the dried persimmon leaves at 23 ~ 28°C for 1 ~ 5 hours; roasting the wilted persimmon leaves at 180 ~ 220°C for 1 ~ 5 minutes three times and drying the persimmon leaves at 70 ~ 100°C for 80 ~ 100 minutes; and drying the persimmon leaves at 180 ~ 220°C in the sun.

A manufacturing method of soybean paste containing anchovies is provided to produce the soybean paste having a good color, a reduced fishy smell, and increased calcium contents by treating anchovies with an alcohol and an organic acid. A soybean paste containing anchovies is manufactured by the steps of: treating anchovies with an alcohol and an organic acid; inoculating Aspergillus oryzae or/and Aspergillus sojae on the treated anchovies; thereto adding water, performing culture, and heating the cultured material; mixing the resultant with a pyroligneous liquid or/and a mushroom extract; drying or concentrating the mixture to obtain a fermented anchovy seasoning; adding the fermented anchovy seasoning to materials for soybean paste; and mixing and aging the admixture.
