본 발명은 쌀 발효물을 이용한 인삼 쌀음료 및 이의 제조방법에 관한 것으로 환원당이 25 내지 35 mg/g인 맵쌀 당화액 및 환원당이 30 내지 40 mg/g인 찹쌀 당화액이 쌀뜨물 발효액으로 발효된 쌀 발효물 및 인삼과 덱스트린이 혼합되어 분자압축탈수된 인삼 탈수물을 포함함으로써, 인삼의 맛과 향이 강하지 않아 남녀노소 누구나 섭취가 용이하며 사포닌의 함량이 높고 종래 쌀음료에 비하여 쌀의 기능성 성분이 더욱 향상된다.

홍시 과피 제거장치가 개시된다. 본 발명에 따른 홍시 과피 제거장치는, 냉동된 홍시가 투입되어 회전하도록 이루어지는 드럼; 드럼 일측에 형성되고 드럼 내부로 공급되는 물이 저장되는 수조; 및 수조 내부의 물을 홍시의 온도 이상으로 가열하도록 이루어지는 히터를 포함하고, 히터에 의해 가열된 물에 의하여 냉동된 홍시의 과피가 해동되고, 과피가 해동된 홍시는 드럼과 마찰하면서 박피되며, 수조 내부로 공급된 물은 홍시의 박피 과정에서 수조 외부로 배출되도록 이루어지는 것을 특징으로 한다. 본 발명에 의하면, 냉동된 홍시의 표면 쪽만이 가열된 물에 의해 해동되면서 물러지도록 하고 이러한 상태에서 드럼 내부에서 회전하면서 박피되도록 하여 홍시의 과피 제거가 매우 용이하게 이루어지고 홍시의 해동에 사용된 물 등이 바로 배출되도록 하여 홍시의 품질저하를 방지하며 홍시 표면 마찰을 줄여 우수한 품질의 과피가 제거된 홍시를 얻을 수 있다.

본 발명은 가공된 무를 함유하는 동치미 음료의 제조방법 및 이에 따라 제조된 동치미 음료에 관한 것으로 세척한 무를 소금물에 침지시켜 절이는 단계; 절인 무를 탈수한 후 큐브 형태로 절단하는 단계; 절단된 큐브 형태의 무에 기능성 용액을 주입하는 과정을 포함하여 가공된 무를 제조하는 단계; 가공된 무와 부재료를 혼합하는 단계; 정제수, 설탕 및 소금을 혼합하여 당ㆍ염 혼합용액을 제조하는 단계; 가공된 무와 부재료의 혼합물과 당ㆍ염 혼합용액을 혼합하는 단계; 혼합액을 숙성시킨 후 여과하는 단계; 및 여과된 여과액과 여과된 가공된 무를 살균하는 단계;를 포함함으로써, 동치미 특유의 이취를 감소시켜 음용하기 부담스러운 동치미의 냄새를 제거하고 가공된 큐브 형태의 무를 포함하므로 마시는 느낌과 씹는 느낌을 동시에 느끼도록 하여 기호성을 향상시킬 수 있다.

본 발명은 비선호부위육을 이용한 미트칩의 제조방법 및 이에 의해 제조된 미트칩에 관한 것으로 원료육, 찹쌀가루, 염지제 및 정제수를 포함하는 조성물을 혼합하여 미트칩 조성물을 제조하는 단계; 미트칩 조성물을 1.5 내지 2.5 mm의 두께로 형성하는 단계; 및 형성된 미트칩 조성물을 건조하는 단계를 포함함으로써, 사용량이 미미한 비선호부위육을 이용하여 부가가치가 높은 미트칩을 제조할 수 있다.

The present invention relates to a manufacturing method of reformed rice for rice crust, and a rice crust manufacturing method using the same which includes the steps of: mixing rice powder and protein powder; obtaining reformed rice by adding moisture to the mixture, and pressurizing and molding the mixture in the shape of a grain of rice with a press molding apparatus; coating the reformed rice by mixing the reformed rice and a starch solution; and drying the rice reformed and coated with the starch solution in an oven. Therefore, the manufactured rice crust has excellent texture, restoring force, and sensory preference.

PURPOSE: A manufacturing method of sausage components which has excellent general preference is provided to facilitate long term storage, and to have lower fat contents(5-15%) than the fat content of conventional sausages(30%). CONSTITUTION: 60-70 weight% of pork and 5-15 weight% of pig fat are ground(S110). 1-10 weight% of purified water is mixed with the ground pork and pig fat(S120). White rice and red rice are mixed with water in a weight ratio of 1:1.1-1.3, and the cooked white rice and red rice are produced by steaming(S130). 10-15 weight% of cooked white rice and 5-15 weight% of cooked red rice are mixed with the mixed pork and pig fat, and the sausage component is produced(S140). Half-finished sausages are produced by filling the sausage component into a casing(S150). The half-finished sausages are treated with heat(S160). The heat treated half-finished sausages are cooled with cold water(S170). 0.1-0.5 parts by weight of additives are added into and mixed with 100 parts by weight of sausage component in a sausage component production step. The additives are more than one selected from a group of salt, pepper, flavoring materials, and majoram. A method of manufacturing red pepper paste containing anchovies which are treated with spirits and organic acids and fermented with Aspergillus oryzae and Aspergillus sojae to conventional red pepper paste is provided to produce the titled red pepper paste with good color, reduced fishy smell and increased amount of calcium. Anchovies are treated with spirits and organic acids, inoculated with one or more strains selected from Aspergillus oryzae and Aspergillus sojae, cultured with water at 25 to 35deg.C for 5 to 10 days, heated at 70 to 90deg.C for 1 to 4hr, mixed with one or more materials selected from wood vinegar and mushroom extract and dried at 40 to 60deg.C for 30 to 60min or concentrated. In the process, 5 to 20 parts by weight of the treated anchovies are added to 100 parts by weight of red pepper paste containing 20 to 60% by weight of glutinous rice flour, 15 to 20% by weight of wheat flour Koji powder, 15 to 30% by weight of soybean Koji powder, 0.1 to 5% by weight of salt, 1 to 10% by weight of red pepper powder, 0.1 to 5% by weight of starch syrup and the remainder of water.

PURPOSE: A Method for the production of an egg containing anti-Edwardsiella tarda IgY, anti-Streptococcus iniae IgY and Mycobacterium bovis IgY simultaneously, an egg produced thereby and a fish feed containing specific IgY thereof are provided. The produced egg and fish feed have excellent prevention effect on a flatfish disease. CONSTITUTION: An emulsion containing Edwardsiella tarda IgY, anti-Streptococcus iniae IgY, Mycobacterium bovis IgY and aluminium oxide in ratio of 3.0:3.0:1.0:3.0 is inoculated into a chicken in the amount of 1.0ml one time, and then, from a second time, the above emulsion and an adjuvant(ISA25) are inoculated together thereinto in the amount of 1.0ml at intervals of 2 weeks to produce an egg containing specific IgY. Egg yolk is then put up in a vessel, stirred in the equal amount of alkali ion water(pH 10.0), left alone for a specified period of time and then the supernatant is ultra-filtrated and freeze-dried after removing a fat layer floated on the upper layer to produce soluble IgY powder.

PURPOSE: A processed food of reconstructed meat using pork and its manufacturing method are provided, thereby preventing destruction of the reconstruction meat while cooking it. CONSTITUTION: The method for producing a processed food of the reconstruction meat using pork comprises the steps of: cutting pork in a certain size; adding TG (transglutaminase) into the cut pork to induce enzyme reaction not to be divided into each piece of pork, in which the TG is TG-B aqueous or TG-B powder wherein the TG-B aqueous is prepared by 0.5 to 1.0% of TG-B than the volume of the pork into 4 times larger volume of water than that of TG-B volume and TG-B powder is added into the pork sufficiently to cover the pork; and the production of the processed food of reconstruction pork is carried out under the temperature of 3 to 6 deg. C and the pressure of 5 kg/cm2 for 6 to 24 hours.
