Abstract: PURPOSE: A production method of rice noodles is provided to offer similar or better texture and palatability than conventional rice noodles using flour. Abstract: PURPOSE: A storing method of ginger is provided to reduce the generation of softening of ginger and fungi in a constant temperature and constant humidity storage, and to maintain the surface hardness so that the storage period of the ginger is extended to almost one year.
